The first one is messing around with gouache, acrylics, oil pastels and mineral spirit, graphite and charcoal pencils, fountain pen, indian ink with a bit of joss stick stalk, and coloured pencils - but not oil ones. Just experimenting with everything.
The next two pictures are Cardiff drawn from Google Earth, in ink pen first, and then gouache.
I thought I would post these, in the hope that it will commit me to a final project!

It seems perfect to me that you want to experiment with so many different materials, that is creative restlessness and it is great that it happens to you because I am like that too. My advice is that you experiment as much as you can and with all the materials you want because there is nothing so wonderful than feeling free and inspired to combine whatever you want. Searching is pure creativity so I encourage you to keep experimenting.
Of course, you must make decisions and then be consistent with them. That is, you have to stop for a moment, observe your work, step back a bit, and make decisions to decide how you are going to approach the project without losing the freshness and emotion of the sketches. Sometimes that step is difficult.
Personally, I really like the castle, image 2. I think you can create a delicious tension with the composition, and a good combination between the greens of nature and the stone can be great.
